A2 ghee is made from milk containing only the A2 variant of beta-casein protein, produced by indigenous cattle breeds such as Badri, Gir and Sahiwal. Regular ghee is typically made from pooled milk containing both A1 and A2 beta-casein.
What is A1 and A2 beta-casein?
Beta-casein makes up roughly 30% of the protein in cow's milk. A single amino acid at position 67 distinguishes the two variants: A1 has histidine, A2 has proline. Most European-origin breeds carry the A1 variant; most indigenous Indian breeds carry A2.
Does the distinction survive into ghee?
Only partly, and this is worth being honest about. Ghee is almost entirely butterfat — around 99.5% — with milk solids removed during clarification. The protein that carries the A1/A2 distinction is largely removed with those solids. What genuinely differs is the fat itself, because it reflects what the animal ate.
